A CHEF who served her apprenticeship at Langley Castle is now cooking up tasty treats in Haydon Bridge.

Lauren Bell is based at the village’s Railway Hotel, where the menu offers a full repertoire of her unique dishes.

The 23-year-old has put her own stamp on meals from different parts of the world, including traditional English pub grub.

“I’ve got settled in over the summer and I am really enjoying it,” said Lauren. “We’ve put on themed evenings such as steak and curry nights, and they have been very popular.”

Originally from Cowgate in Newcastle, Lauren moved to Haydon Bridge three years ago, when she began working behind the bar at the village’s Anchor Hotel.

But after being asked to help out in the kitchen, she soon proved a dab hand, and went on to serve her apprenticeship at Langley Castle, where she was trained by the renowned Norman Bradford.

“Norman is classically French trained,” said Lauren. “I learned the French style of cooking, and I can do everything from bread, to pasta and pastries.

“I’m grateful for all the skills I have gained, and now I am able to put my own stamp on the dishes I cook.”

Lauren, who is also accomplished at making a wide range of accompanying sauces, believes in high standards.

“Good food is all about the freshness of the ingredients,” she added. “Getting the sauces and seasoning right is key, and I use high quality local produce.”

In basing herself at the Railway Hotel, Lauren complements the work of landlord Calvin Hood and his team.

“I am self employed, but my job is to provide meals for everyone at the Railway, from the guests who stay here, to people who come in specifically for a meal,” she added.

Lauren, who is also a pizza and burger specialist, provides food to eat in and take out. She is preparing to introduce a fish night.
