The start of the grouse shooting season, on August 12, marked a busy time for James Fisher, sous chef at Langley Castle Hotel.
For James regularly works with a local gamekeeper to bring in the very best available game for guests and non-resident diners.
During the season, diners are being assured that the game on their plates will be served fresh on the day. However, its availability each evening will be dependent on activity out on the moors.
Head chef Mark Percival said: “Grouse is a northern game bird species, and many visitors from southern England and overseas like to give this type of meat a try.
“Game is an extremely popular choice here because diners appreciate it carries a healthy-eating tag and have become more adventurous in their dining choices.”
